Tasting Notes: Healthy & Light Indian Inspired

I've just started Weight Watchers again. I know one of the keys for me in terms of losing weight is eating (and therefore cooking) at home more often. I need to make that a priority. My goal is to cook dinner 3-4 times a week (up from 1-2). I love cooking, but my schedule has me out 3-4 nights a week these days, so we will see how it goes.

Tonight I am cooking.

I am making a Curried Apple-Butternut Squash Soup. No added fat except for a few tablespoons of light cocont milk. I love soups because they are quick, easy, and comforting. They also keep well for lunch at the office.

I am also making a Chickpea Puree with Toasted Indian Spices. This is essentially homemade hummus, but with an Indian flair. I'm serving it with simple raw veggie crudites.

That plus a crust multi-grain bread and I am good to go.

Simple, delicious, and far healthier than the Red Robin Cheesburger I might have had tonight.

What healthy recipes can you recommend? Any great soup recipes or ideas?
